What to Expect on the Water
Your day starts early – we're talking pre-dawn departure to maximize fishing time in prime offshore waters. The "MEAT HAUL" and "MEAT MASH" aren't just catchy names; they're promises. These 8 to 10-hour trips give us the time to work multiple spots, from nearshore structure to the deeper ledges where trophy fish hang out. You'll spend your day bottom fishing over wrecks and reefs, with Brett positioning the boat perfectly to keep your lines in the strike zone. The Gulf of Mexico off Pensacola is loaded with structure – artificial reefs, natural bottom, and shipwrecks that hold incredible numbers of fish. We'll move around based on what's biting, so you're always fishing the hot bite rather than beating dead water.
Gear Setup and Techniques
We fish primarily with conventional reels and heavy action rods – the kind of tackle that can handle a 40-pound amberjack or a cooler-sized grouper without breaking a sweat. Most of our fishing happens on the bottom using circle hooks with fresh cut bait, live bait when available, and proven bottom rigs that get down fast in the current. Brett provides all the terminal tackle, bait, and expertise to keep you hooked up. You'll learn proper bottom fishing technique, how to feel the difference between a fish bite and bottom contact, and when to set the hook for maximum success. The key out here is staying on the bottom in current and structure – something that takes experience to master, but Brett makes it look easy.

"We had a blast. We booked a graduation trip so my son and I could make a few more memories, and boy did we. Captain Brett knows his stuff. We fished and caught mingos, black snapper, trigger fish, amberjacks (yes, two of them although only one was keeping size), spanish mackrel, bait fish, and even sucker fish (by accident but we got it). We all worked together to have a good time. If he was taking a fish off a line, then we would bait our hooks. If he was baiting a hook, then we would get the fish off if we could. That means more line time in the water. To me going fishing means everyone works to achieve a good outcome. We seen several dolphins that are nice to look at, but I quickly learned ruin the fishing when they show up. We also seen a sea turtle while we were out. I was amazed when one of the other boats told Captain Brett about a red snapper that was floating and needed the air bladder popped. He did what he could to try to save that fish's life. Played 80s music during the trip, which I think he knows the words to all of them. It was a great experience with a lot of memories made. I will say to anyone going on trips like this, you should look at the captain as the guide and a helping hand, not your own personal butler. Species You'll Want to Hook
Greater Amberjack are the bulldogs of the Gulf, and these fish will absolutely test your endurance. Running from 20 to 60+ pounds in our waters, amberjack hit hard and fight harder, making long powerful runs that'll have your arms burning. Peak season runs from spring through fall, and they love structure – wrecks, reefs, and drop-offs are amberjack magnets. What makes them so popular with serious anglers is the combination of size, fight, and excellent table fare when properly prepared. They're also curious fish, often coming up to check out the boat, which makes for some exciting fishing when you can see them before they bite.
Atlantic Goldeneye Tilefish are the hidden gems of deep water fishing, living in 300+ feet of water along muddy bottom areas. These colorful fish average 3-8 pounds and are absolute table fare champions – firm, white meat that's perfect for any preparation. They're year-round residents but fish best during cooler months when they're more active. Tilefish are unique because they build burrows in the mud, and once you find a good tilefish spot, it'll produce consistently. They're also willing biters, making them perfect for filling out a mixed bag when the bigger fish are being finicky.
