Bottom Fishing Techniques
We're running bottom rigs on this charter – no trolling around hoping something hits. This is targeted fishing where we drop down to structure that holds fish consistently. The Gulf bottom varies from 60 to 120 feet in our fishing zones, with rocky outcroppings, artificial reefs, and natural ledges that act like fish condos. Species You'll Want to Hook
Mahi Mahi, or Common Dolphinfish as they're officially known, are pure excitement on the end of your line. These fish are built for speed and acrobatics, often jumping repeatedly when hooked. In the Gulf, we typically find them around floating debris, weed lines, or near the surface over deeper water. They average 10-20 pounds, but those bull males can push 40 pounds or more. Summer months are prime time for Mahi, roughly May through September, when they're most abundant in our waters. What makes them such a favorite is their willingness to bite, their incredible fight, and some of the best eating you'll find in saltwater.
Cobia are the bulldogs of the Gulf – powerful, stubborn, and built like submarines. These brown sharks of the fishing world cruise around structure and in the open Gulf, often following rays or sharks. They're curious fish that will sometimes surface near the boat, giving you that heart-stopping moment when you see a 40-inch fish just swimming around checking you out. Peak season runs from March through June, though we catch them sporadically year-round. A good Cobia will test every knot and connection you have, making long runs and using their broad body to leverage against your drag. They're also fantastic table fare when prepared right.
Red Snapper remain the king of Gulf bottom fishing, despite all the regulations and seasons we navigate. These red rockets are aggressive feeders that school up around hard bottom and structure. A keeper Red Snapper averages 3-8 pounds, but we regularly see fish in the teens, and those 20-pound-plus slabs are always a possibility. They're smart fish that can be finicky, but when they're feeding, it's game on. The season typically runs summer months, but regulations change, so we stay current on what's legal when you fish with us. The fight is solid and steady rather than spectacular, but the eating quality is off the charts – firm, white meat that's perfect for almost any preparation.
Gag Grouper are the heavyweights of our targeted species, with their broad heads and powerful bodies built for living around rocks and structure. These fish can reach impressive sizes – 20 to 30 pounds isn't uncommon, and true trophy fish push 40 pounds or more. They're ambush predators that will grab your bait and immediately head for the nearest rocks, making the first few seconds of the fight absolutely critical. You've got to turn their head and get them up and away from structure, or they'll cut you off every time. Season typically runs from July through December, though regulations can vary. What anglers love about Gag Grouper is the combination of the technical challenge they present and the reward of some seriously good eating when you do everything right.
