The run out to our offshore spots takes about 45 minutes to an hour, depending on where the bite's been best. You'll find them in 40-150 feet, especially near temperature breaks and structure during fall through spring when water temps stay above 68°F. What makes them special is that beautiful golden stripe along their sides that fades once they're boated. They're incredibly fast swimmers and put up a scrappy fight that'll surprise first-timers. The meat is excellent - firm, red, and perfect for searing or sushi. Pro tip: scale down your tackle with 30-pound fluoro leaders and 5/0 circle hooks since these fish have sharp eyes and will spook from heavy gear.
Sphyraena BarracudaGreat Barracuda are the wolves of the shallows - sleek, silver predators built for speed with those unmistakable razor-sharp teeth. Most run 2-4 feet, but the big ones can hit 6 feet and over 100 pounds. You'll find them in coral reefs, grass flats, and around structure from shallow water to about 100 feet. They're year-round residents here, but spring spawning season sees them most active and aggressive. Seriola dumeriliGreater Amberjack are the bulldozers of the reef - thick-bodied fish that can stretch over 6 feet and average around 39 pounds. You'll recognize them by that distinctive amber stripe running along their bluish-grey sides. These brutes live around structure in 60-200 feet of water, especially wrecks, reefs, and hard bottom. Spring is prime time when they spawn from April through May and are most aggressive. What guests love is that initial power dive when hooked - they'll head straight for structure trying to break you off, testing every knot and connection. The meat is excellent eating, though larger fish can carry ciguatera risk. They're not picky eaters, taking live bait, jigs, and plugs equally well. Scomberomorus CavallaKing Mackerel, or "kingfish" as we call them locally, are some of the fastest fish in these waters - only wahoo can match their speed. These silver torpedoes average around 30 pounds but we've seen them push 90+ pounds, especially the big females. You'll find them in 40-150 feet over structure and along the edge, preferring water temps between 68-84°F. Spring through fall are prime times when they're actively feeding. What guests love is that explosive strike when they hit a trolled bait at 35 mph - it'll test your drag system for sure. The meat is good eating but has higher mercury levels. Here's a local trick: rig two hooks on a wire leader when using live bait - one through the nose, another trailing behind. Kings love to bite the back half of baitfish, so that trailing hook saves a lot of missed fish.
Coryphaena HippurusMahi are hands-down the most colorful fish we target - brilliant gold sides with electric blue and green that literally light up underwater. They average 15-29 pounds but can hit 87 pounds on rare occasions. These surface dwellers love floating debris, weed lines, and current edges where baitfish gather. We find them year-round in our warm Gulf waters, but spring through fall are peak seasons. What makes them special is watching that color show when they're hooked - they flash like neon signs before fading to silver. They're also fantastic table fare with firm, white meat that's mild and sweet. The fight is strong but short-lived since they don't live long or grow old.
