Seriola dumeriliThese bruisers average 30-40 pounds but can hit 100+ pounds and stretch over 6 feet long. You'll find them around wrecks, reefs, and oil rigs in 40-200 feet of water. Spring migration from April through June is prime time when they're spawning and feeding heavy. What guests love is the pure power - amberjacks will test your tackle and your back with long, hard runs. The meat quality is top-notch too, firm and white. We target them with heavy tackle, 50+ pound line, using live bait or metal jigs. Here's the trick: once you hook up, keep steady pressure and don't let them get back to structure or they'll cut you off every time.
Centropristis StriataBlack sea bass are steady producers, averaging 1-3 pounds with the occasional 5-pounder mixed in. They live on hard bottom around wrecks, reefs, and jetties, usually in 20-100 feet. These guys bite year-round, but spring through fall is best when they're most active. They're perfect for families - aggressive biters that aren't too hard to handle. Plus they're some of the best eating fish in the ocean, sweet and flaky. They travel in schools, so once you find them, you can usually catch several. They'll hit squid, clams, or bucktail jigs. My advice: once you catch one, stay put and work the area thoroughly - there's usually more right there.
