Your day starts early because we've got serious miles to cover before we even wet a line. As we clear the inshore waters and head for the deep stuff, you'll see the water change from green to that gorgeous cobalt blue that means we're getting close to fish country. The boat's equipped with everything you need – quality rods and reels, a full spread of tackle, and all the terminal gear to handle whatever we hook up with. We've got GPS coordinates on productive bottom structure, and the fish finder will show us exactly what's down there before we drop a line. Out here in 100 to 300 feet of water, we're fishing structure – artificial reefs, natural rock piles, and ledges where big fish set up shop. The technique is straightforward but requires some finesse. We'll anchor up or drift depending on current and wind, then drop heavy sinkers with circle hooks and fresh cut bait down to where the fish are holding. You'll feel the difference immediately when your sinker hits bottom in deep water – there's a solid thump that tells you you're fishing the right zone. We use everything from 6-ounce weights up to a full pound when the current's really moving. The key is getting your bait down fast and keeping it in the strike zone. When a big grouper picks up your bait, you'll know it – they don't nibble, they grab it and head for their hole. Setting the hook means cranking hard and not giving them an inch, because once they get back to structure, the fight's over and they win.
Red grouper are the bread and butter out here, and they're exactly what most folks are hoping to box when we head offshore. These fish range from keeper-sized 5 pounders up to genuine wall-hangers pushing 15 to 20 pounds. They live around hard bottom and structure, and they're aggressive feeders that will hit cut bait, live pinfish, or even jigs when they're really fired up. The best months are typically spring through early summer when they're spawning and feeding heavily. What makes red grouper so popular is they fight hard on the way up from deep water, they're excellent eating, and landing a big one always feels like an accomplishment. The smaller ones will come up pretty easy, but when you hook into a doormat, you'll be cranking for several minutes straight.
Red snapper are the other main target, and when they're biting, it's some of the fastest action you'll find offshore. These fish travel in schools and when you find them, you can usually catch them as fast as you can get baits down. They're spooky though – too much noise or too many lines in the water and they'll disappear just as quickly as they showed up. Snapper season varies by regulations, but when it's open, we target them aggressively with lighter tackle and smaller hooks. They're absolute dynamite on the dinner plate and they fight surprisingly hard for their size. A good day on red snapper means the cooler fills up fast and everyone goes home with fish to clean.
Gag grouper show up mixed in with the reds, but they're typically larger and more aggressive. These fish will hit bigger baits and they'll pull harder when hooked. They're not as common as red grouper, but when one eats, you know you've got something special on the line. King mackerel cruise the deep water too, especially during their migration periods in spring and fall. When we mark them on the fish finder, we'll switch to live bait or pull some trolling lures to try to get them fired up. Amberjack are another possibility – big, strong fish that will test your tackle and your back muscles. Various snapper species round out the mix, including vermillion snapper, lane snapper, and mutton snapper depending on exactly where we're fishing and what time of year.
