Target Species You'll Hook
Mutton Snapper are one of the most sought-after fish in these waters, and for good reason. These gorgeous fish with their distinctive red coloration and yellow fins can grow over 20 pounds and they fight like bulldogs. They're structure-oriented fish that love hanging around reefs and ledges in 30-100 feet of water. Peak season runs from late spring through early fall when they're actively feeding and easier to locate. What makes mutton snapper special is their excellent table fare - firm, white meat that's perfect for grilling or making fish tacos. They're also smart fish that can be finicky about bait presentation, which makes landing a good one even more satisfying.
Black Grouper are the heavyweights of the reef system, often called "black bass" by local anglers. These bruisers can exceed 50 pounds and they know how to use every ounce of that muscle to try to get back to their rocky hideouts. You'll find them around hard bottom structure in depths from 60 to over 200 feet. They're ambush predators that inhale baits quickly, so when you get a bite, you need to set the hook hard and start pumping. The fight is all about power - they'll try to wrap your line around whatever structure is nearby. Summer months offer the best action when they're most active and feeding aggressively on the abundant baitfish around the reefs.
Gag Grouper might not get as big as their black cousins, but they're scrappy fighters that provide consistent action throughout the cooler months. These fish are more abundant during fall and winter when they move into shallower water to spawn. They typically range from 5 to 25 pounds and they're curious fish that often approach the boat when you're anchored over good structure. Gag grouper are excellent eating with sweet, flaky meat that holds up well to various cooking methods. They respond well to live bait like pinfish and grunts, but they'll also take cut sardines and squid when presented properly.
Grey Snapper, also known as mangrove snapper, are the opportunists of the reef community. They're always around good structure but they're also the fish most likely to show up when you're targeting something else entirely. These fish are incredibly line-shy and bait-conscious, which makes them a favorite challenge for experienced anglers. They typically run 2-8 pounds but occasionally surprise you with a doormat over 10 pounds. Year-round residents, they provide
