Our 8-12 hour fall charters run exclusively from September 1st through October 31st, starting at 6 AM sharp when the fish are most active. What to Expect on the Water
Your day starts before sunrise because that's when the magic happens. We'll be idling out of Destin Harbor while most folks are still hitting the snooze button, heading to productive waters 20-40 miles offshore where the continental shelf drops off and the big fish roam. Fall conditions in the Gulf are typically calmer than summer, with less afternoon thunderstorm activity and more stable weather patterns. The water temperature starts cooling from the summer highs, which triggers massive baitfish migrations – and where the bait goes, the predators follow. You'll spend your day working everything from live bait fishing over structure to high-speed trolling in blue water, depending on what's biting and where we're finding the action. Our captain reads the water conditions, watches the electronics, and adjusts tactics throughout the day to keep you on fish.
Tackle and Techniques
We fish multiple methods depending on the target species and conditions. For the big pelagics like bluefin tuna, we'll be trolling spreads with a mix of ballyhoo, cedar plugs, and diving plugs at varying depths and distances behind the boat. When we mark fish on the bottom machine over wrecks and ledges, we switch to heavy conventional tackle with circle hooks and live or cut bait for grouper and amberjack. The fall season means we're often chunking and live baiting when the conditions are right – drifting cut bait or live pinfish and cigar minnows in the current while watching the sonar for moving fish. All tackle and bait are included, though serious anglers are welcome to bring their own gear if they have preferences. We run quality Penn and Shimano reels spooled with fresh line, and our tackle gets checked and maintained regularly because there's nothing worse than losing a fish of a lifetime to equipment failure.
Target Species
Bluefin tuna are the crown jewel of fall fishing in Destin, and September through October is prime time. These fish are absolute powerhouses, often running 40-200+ pounds, and they'll test every bit of your tackle and stamina. Bluefin move through our waters following massive schools of baitfish, and when you hook one, you know it immediately – they make blistering runs that can peel hundreds of yards of line in seconds. The fight can last 30 minutes to over an hour, and landing one is a badge of honor among serious anglers.
Gag grouper are fall favorites because they're feeding heavily before winter, making them more aggressive and easier to target. These bottom dwellers hang around structure in 60-150 feet of water, averaging 15-30 pounds with occasional monsters pushing 40+. Gag are smart fish that require patience and the right presentation – they'll inspect your bait before committing, and once hooked, they immediately dive for the rocks trying to break you off. The key is stopping that first run and muscling them up before they can get into the structure.
King mackerel fishing peaks in fall as schools of "smoker" kings move through our area. These fish are built for speed, with razor-sharp teeth and the ability to make screaming runs. Fall kings typically run 15-40 pounds, though 50+ pounders show up regularly. They're excellent eating and provide non-stop action when you find a school. We target them with fast-trolled live baits, spoons, and diving plugs, often catching multiple fish per pass when conditions are right.
Mahi mahi, or dolphinfish, are one of the most colorful and acrobatic fish in the Gulf. Fall brings scattered schools and floating debris lines where mahi congregate. These fish are absolutely beautiful – bright gold, green, and blue colors that light up when they're hooked. They jump repeatedly and provide spectacular fights on medium tackle. Mahi average 10-25 pounds but can reach 40+, and they're considered some of the best eating fish in the Gulf.
Greater amberjack are the bulldogs of the reef, powerful fish that make long, punishing runs and test your endurance. Fall amberjack fishing is outstanding around wrecks and artificial reefs in 100-200 feet of water. These fish commonly weigh 30-60 pounds, with occasional giants over 80 pounds. They're incredibly strong fighters that use their broad sides and powerful tails to battle you all the way to the boat. Hooking a big AJ over structure is always a challenge – you've got to turn them before they wrap you around the wreck.
