Destin Winter Fishing at Its Finest
Looking for some serious offshore action during the cooler months? Our seasonal 5-6 hour charter aboard Charter Boat Destination is exactly what you need. Running from November through February, this trip takes advantage of Destin's prime winter fishing window when the big pelagics are moving through our waters. We push off at 7:00 AM sharp, giving you the best shot at productive fishing before the afternoon winds pick up. With space for up to 10 anglers, this is perfect whether you're bringing the whole crew or joining other passionate fishermen for a day you won't forget.
What to Expect on the Water
This isn't your typical inshore grind – we're talking real offshore fishing here. Once we clear the jetties, we'll be heading out to the deeper waters where the serious fish hang out during winter months. The vibe on these trips is all about catching fish while doing it the right way. Most of what we hook gets released back to fight another day, which keeps these fisheries healthy for everyone. Don't worry if you're new to this – our crew knows how to get beginners hooked up while keeping the experienced anglers challenged. The boat handles the gulf swells like a dream, and with our fish-finding electronics, we're not just hoping for luck. We're hunting specific structure and temperature breaks where the fish are actually feeding.
Trolling Tactics That Work
We run a spread of high-speed trolling lures and live bait depending on what we're marking on the sounder. The winter months are prime time for pulling lures at 8-12 knots, covering water until we find the active schools. When the kings are running, nothing beats the adrenaline rush of that first screaming run peeling line off your reel. We'll also work some bottom structure with live and cut bait when the snappers are cooperative. The tackle is all top-shelf stuff – Penn and Shimano reels that can handle whatever decides to eat your bait. If you've got your own lucky rod, feel free to bring it along, but our gear is tournament-grade and ready for anything from 20-pound kings to monster cuberas.
Species You'll Want to Hook
King Mackerel are the bread and butter of these winter trips, and for good reason. These silver rockets typically range from 15 to 40 pounds, with the occasional smoker pushing 50-plus. November through January is peak season as they migrate south along our coast. What makes them so addictive is that initial run – when a big king eats your lure, it's pure chaos for the first few minutes. They'll peel 200 yards of line before you even realize what hit you. The fight stays strong right to the boat, and they're beautiful fish with those distinctive tiger stripes.
Mahi Mahi, or dolphinfish as the old-timers call them, are the most colorful fighters you'll find offshore. During winter, we typically see them in the 10 to 25-pound range, though bull dolphins over 40 pounds do show up. They love floating debris and temperature changes, which is perfect because that's exactly what we're looking for anyway. Once you hook one mahi, keep your lines in – they travel in schools and you might hook three or four before they wise up. Their colors are absolutely stunning when they're fired up and fighting.
Vermilion Rockfish might not be the flashiest fish in our spread, but they're solid fighters and excellent eating. These guys hang around hard bottom and structure in 80 to 200 feet of water. They'll typically run 2 to 8 pounds, with the occasional jumbo pushing double digits. What's great about vermilions is they're usually willing to bite when other species are being picky, so they keep the action going steady throughout the trip.
Cubera Snapper are the bruisers of the snapper family, and hooking one is like tying into a submarine with an attitude. These monsters can exceed 50 pounds and will test every knot and connection you've got. Winter is actually prime time for cuberas as they move into deeper water and become more active. They're not common catches, but when one eats, everyone on the boat knows it. The fight is all about power – they'll try to cut you off on structure or simply overpower your drag.
Red Snapper rounds out our target list, and even though the seasons are limited, when they're open, these winter trips can produce some beautiful fish. Reds in our area typically run 5 to 20 pounds, with the bigger breeding-size fish living in deeper water. They're smart and can be finicky, but once you figure out what they want, you can load the boat. Their bright red color and excellent table fare make them a favorite among anglers of all skill levels.
