Guests love them for that bulldog fight and the fact they're hands-down the best eating fish in these waters - sweet, flaky white meat. Live pinfish or fresh squid on the bottom gets their attention fast. Key tip: when you hook one, keep steady pressure and your rod low - they'll dive straight back to the rocks and cut you off every time if you let them.
Epinephelus Snowy grouper are the deep-water prize, living 300-600 feet down on rocky bottoms and averaging 30 pounds. These copper-colored bruisers with white spots are only open May through August with a one-fish-per-vessel limit, making them special. What draws anglers is the challenge - finding them deep and then cranking them up from serious depths. That's why we use electric reels and heavy tackle.
