Species You'll Want to Hook
Vermilion Rockfish are absolute favorites among both first-time anglers and seasoned pros. These beautiful red and orange fish live around rocky reefs in 60 to 200 feet of water and they're notorious for their aggressive strikes. They'll typically run 2 to 5 pounds, though we see some real chunky ones pushing 8 pounds during peak season. Spring through fall gives you the best shot at vermilions, and they're fantastic table fare with firm white meat that's perfect for fish tacos or grilling whole.
California Sheephead are one of the more unique catches you'll encounter on our trips. These wrasse species have distinctive black and red coloring with prominent teeth they use to crush shellfish and sea urchins. The males can get surprisingly large - we've seen them over 15 pounds - and they put up a solid fight on medium tackle. They're year-round residents but bite best during warmer months when they're more active. Many anglers are surprised by how good they taste, with sweet, flaky meat that rivals any premium fish.
When the Yellowtail Amberjack show up, that's when things get really exciting. These are legitimate game fish that can reach 20 to 40 pounds and will test your endurance with long, powerful runs. Summer and early fall bring the best yellowtail fishing as schools move up from Mexico following warm water currents. They're incredibly strong fighters that won't give up easily, often making multiple runs toward the kelp to try and break you off. The payoff is worth it though - yellowtail sashimi is as good as it gets.
Pacific Bonito might be smaller than yellowtail, but they make up for it with pure speed and attitude. These 3 to 8 pound speedsters travel in schools and when you find them, the action can be non-stop. They hit live bait, jigs, and small lures with surprising aggression for their size. Bonito are most common during summer months and they're excellent smoked or grilled with some citrus and herbs. Don't let their size fool you - they'll give you a great fight on lighter tackle.
Pacific Barracuda are the wolves of the inshore waters, with razor-sharp teeth and lightning-fast strikes that'll wake you up in a hurry. They average 4 to 8 pounds but occasionally we'll hook into monsters over 10 pounds that are pure muscle and attitude. Barracuda are most active during late summer and fall, often found near the surface where they ambush schools of baitfish. They're fantastic eating when prepared fresh, with firm white meat that's perfect for ceviche or pan-searing.
