Species You'll Want to Hook

Greater amberjack are the muscle cars of the reef, and while we're fishing inshore, these bruisers often cruise the deeper channels and edges around Crab Island. When you hook into an AJ, you'll know it immediately – they make long, powerful runs that will test your drag and your arms. Most of the amberjack we see range from 15 to 40 pounds, with the occasional monster pushing 50-plus. They're structure-oriented fish, so we'll target them around any hard bottom, rocks, or artificial reefs in the area. Live bait works best, but they'll also crush a well-presented jig. Summer through early fall is prime time for amberjack action.
Spanish mackerel are speed demons that travel in schools and provide fast-paced action when they're around. These chrome rockets rarely weigh more than 3 pounds, but what they lack in size they make up for in attitude and numbers. When a school moves through, it's not uncommon to hook multiple fish on consecutive casts. They have razor-sharp teeth, so we use short wire leaders to prevent bite-offs. Spanish mackerel are most active during the warmer months, typically from late spring through early fall, and they love to chase small spoons, jigs, and live bait fished near the surface.
Southern flounder are the masters of camouflage, lying flat on sandy and muddy bottoms waiting to ambush unsuspecting prey. These flatfish are prized for their excellent table fare and their sneaky fighting style. They don't make long runs like other species, but they're strong and will try to wrap your line around any structure they can find. Most flounder we catch range from 14 to 20 inches, with the occasional doormat stretching over 24 inches. They respond well to live shrimp, finger mullet, and soft plastic baits worked slowly along the bottom. Fall is traditionally the best time for flounder as they stage for their offshore spawning migration, but we catch them year-round in Destin's inshore waters.
