They school up over hard bottom and artificial reefs, sometimes so thick you can see them on the fish finder. The meat is firm and mild, perfect for any preparation. Federal season runs summer through fall, with specific dates varying each year.
Gag Grouper are the apex predators of the reef systems, with larger specimens reaching 30 pounds or more. These dark-colored grouper are more aggressive than their red cousins, often taking baits on the way down. They're ambush predators that hide in caves and under ledges, exploding out to grab prey. Gags fight harder and longer than red grouper, making powerful runs and using their broad tails to great advantage.
