Scamp grouper are particularly prized for their table fare, while gag grouper are the most common and fight the hardest.

What guests really enjoy is their acrobatic nature - blacktips are known for jumping completely out of the water when hooked, sometimes multiple times. They're also one of the more predictable sharks, making them great for families. The secret to success is heavy chum and circle hooks on wire leaders. Once you get them going on a chum slick, you can usually keep them around for multiple hookups.
Scomberomorus CavallaKings are some of the most popular gamefish in the Gulf, and for good reason. These speed demons typically run 15-30 pounds, though we see plenty of bigger fish in the 40-60 pound range on our longer trips. They hang out in 40-150 feet of water, often around structure or temperature breaks. What makes them special is their blistering runs - they'll scream off 200 yards of line before you know what hit you. Kings also make excellent table fare with their firm, flaky meat. The key to landing them is using a wire leader since they have razor-sharp teeth that'll cut through mono in a heartbeat. I always tell my clients to keep the drag loose on the initial run - let them tire themselves out before you start putting pressure on them.
Coryphaena HippurusMahi are hands-down one of the most beautiful fish you'll catch out here, with those brilliant gold and green colors that light up when they come boatside. They typically run 15-30 pounds in our waters, though we get some real bulls pushing 40-50 pounds. These surface dwellers love floating debris, weedlines, and temperature breaks in 100+ feet of water. Spring through fall is prime time when water temps warm up. What makes them so popular is their acrobatic fight - they'll jump clear out of the water multiple times. Plus, they're some of the best eating fish in the Gulf with that sweet, firm white meat. My go-to trick is to always leave one hooked fish in the water while you rebait - mahi travel in schools and the hooked fish will keep the others around the boat.
Lutjanus CampechanusRed snapper are the crown jewel of Gulf fishing when they're in season, and there's nothing quite like pulling up a nice red from 80-150 feet of water. These bottom dwellers average 2-8 pounds, but we regularly see fish in the 10-15 pound range on the deeper wrecks and hard bottom. They're structure-oriented fish, so we target artificial reefs, natural ledges, and wrecks where they school up. What makes them so sought-after is their fight - they'll head straight for cover when hooked, testing your drag and skill. Plus, they're absolutely fantastic eating with that sweet, mild flavor. The trick with reds is getting your bait down fast before the smaller fish grab it. I use heavy sinkers and fish right on bottom with live or fresh dead bait. Circle hooks are mandatory to help with proper releases during closed seasons.

What makes them great targets is their aggressive nature and constant action when you find a school. They also make excellent table fare - sweet, mild meat that grills up perfectly. The key is using light tackle with small spoons or jigs and keeping them moving fast. Once you hook into a school, work it quickly since spanish mackerel spook easily.
