We find them in 250-800 feet of water over hard bottom and rocky areas where they feed on crabs, shrimp, and worms. They're year-round fish, but spring and summer seem to produce the best action. What's nice about tilefish is they're not spooky - they'll bite well and the meat is excellent eating, similar to grouper with firm white flesh. The key is getting your bait right to the bottom and being patient. These fish aren't aggressive strikers, so when you feel that subtle weight or steady pull, don't jerk - just start reeling steadily to keep constant pressure on them.
