Offshore Fishing Charter Florida – Grouper, Amberjack and Snapper Guided Trip
When you're ready to fish the deep blue waters off Florida's coast, this 8-hour offshore charter delivers the real deal. We're talking about pushing 40 to 50 miles out into the Atlantic, where the water runs deep and the fish get serious. Captain Matt and his crew know these waters like the back of their hand, and they'll put you on fish that'll test your tackle and your skills. This isn't your typical near-shore trip – we're heading to the productive offshore grounds where grouper hide in structure, amberjack patrol the wrecks, and snapper stack up in numbers that'll keep your arms burning all day long.
What to Expect on the Water
You'll be fishing from a well-equipped 32' Boston Whaler that's built for comfort and performance in offshore conditions. The boat handles the swells like a champ, giving you a stable platform to work from when you're battling big fish. We'll hit productive bottom structure where the fish congregate, dropping your lines down to depths where the good stuff lives. The crew provides all your bait, tackle, and fishing licenses, so you just need to bring yourself and maybe some snacks for the ride. This charter maxes out at 4 anglers, which means plenty of elbow room and personalized attention from the crew. Whether you're an experienced angler or someone looking to step up their fishing game, the captain adjusts the approach to match your skill level while keeping everyone in the action.
Bottom Fishing & Trolling
The primary focus is bottom fishing the offshore structure where grouper, snapper, and amberjack call home. We'll anchor up on productive spots and drop heavy tackle down to the fish. You'll be using circle hooks with cut bait or live offerings, working the bottom where these species feed. The technique requires some finesse – you need to feel the bite, set the hook, and then muscle these fish up from the depths before they can get back to their rocky hideouts. When conditions allow, we also offer trolling options for pelagic species like king mackerel, barracuda, and cobia. Trolling means covering water with lures or rigged baits behind the boat, targeting fast-moving predators that cruise the blue water. The crew handles all the rigging and explains the techniques, but be ready to grab the rod when something hits – these fish don't mess around.
Customer Stories
"We had an amazing time on this trip! Captain Matt and Greg were incredibly knowledgeable and took us to some fantastic fishing spots. As soon as our bait hit the water, we were reeling in fish! We landed some massive Red Snappers (which we had to release, unfortunately), plenty of big Black Sea Bass, an Atlantic Sharpnose Shark (also released), and a variety of other fish. We even brought home a cooler full to Nebraska! The water was a bit rough at first for us land lovers, but it didn't take away from the experience. Huge thanks to Matt and Greg for an unforgettable adventure!" - Jeffrey
"Captain Matt and Greg were outstanding! We caught multiple fish and a variety of species throughout the trip. At 55, I felt completely comfortable even when the seas got rough. Captain Matt took an alternate route back to ensure a smoother ride, showing just how much he cares about his passengers' comfort. This crew is top-notch, and I highly recommend this trip. We're already planning our next adventure—a Gulf Stream trip with them!" - Jeff
Target Species
Gag Grouper are the crown jewel of offshore bottom fishing along Florida's coast. These powerful fish inhabit rocky ledges, artificial reefs, and structure in 80 to 200 feet of water. Gags are smart fish that require patience and skill to hook and land. They'll test your drag system and try to get back to their rocky homes once hooked. The best fishing typically runs from late fall through early spring when they move into shallower waters. What makes gag grouper so special is their excellent table fare and the challenge they present – they're strong, stubborn, and absolutely delicious when prepared fresh.
Black Sea Bass are consistent producers and perfect for anglers who want steady action throughout the trip. These fish school up around structure and will readily take both cut bait and small jigs. They typically run 1 to 4 pounds, though larger specimens can reach 6 pounds or more. Black sea bass are active year-round in Florida waters, making them reliable targets when other species might be finicky. They're aggressive feeders that often compete for baits, leading to multiple hookups that keep everyone busy. Plus, they're excellent eating fish with firm, white meat that's perfect for fish tacos or fried preparations.
King Mackerel represent the speed and excitement of offshore trolling. These torpedo-shaped predators patrol the blue water, often following temperature breaks and bait schools. Kings are known for their blistering runs and aerial displays when hooked. The best action typically occurs during warmer months, though Florida's climate means year-round opportunities exist. What makes king mackerel fishing so exciting is the explosive strike – when a king hits your trolled bait, there's no mistaking it. These fish can reach 30 pounds or more and will test both your equipment and your endurance during the fight.
Grey Triggerfish might look unusual, but they're prized for their fight and their taste. These fish have powerful jaws designed for crushing shellfish and crustaceans, which makes them interesting to catch and excellent to eat. Triggerfish are structure-oriented, hanging around reefs and wrecks where they feed on bottom-dwelling prey. They're curious fish that often investigate baits thoroughly before committing, requiring patience from anglers. The reward is worth the wait – triggerfish put up a dogged fight and their firm, sweet meat is considered a delicacy by those who know good eating fish.
