Summer Flounder, or fluke as we call them locally, are the masters of deception lying flat on sandy bottoms waiting to ambush baitfish. These flatfish are abundant in Hampton Bays from late spring through early fall, with the bigger "doormat" fluke showing up as the season progresses. What makes fluke fishing so addictive is the technique – you're constantly working your bait, feeling for that subtle tap that signals a fluke has grabbed your offering. The fight might not be spectacular, but when you see a 5+ pound fluke come up from the depths, that wide body and pure white underside makes for an impressive catch and excellent table fare.
