Trolling, Bottom Fishing & Live Bait
This trip combines the best offshore techniques to maximize your chances. We'll start with trolling spread using planers and downriggers to cover water and hunt for Kings and Mahi. The crew sets up multiple lines at different depths, so you're always in the game. When we hit structure or find good bottom, we'll switch to live bait and bottom rigs for Amberjack, Red Snapper, and Cobia. The captain reads the water, watches the birds, and follows the bait schools. Some days we'll drift fish over wrecks, other times we'll anchor up on productive reefs. The beauty of a 12-hour trip is flexibility – if one technique isn't producing, we've got time to move and try something else. Live bait fishing is where things get wild, especially when a big Cobia comes up to check out what's happening under the boat.
Species You'll Want to Hook
King Mackerel are the bread and butter of Destin offshore fishing, and these silver bullets will test your drag system. They typically run 15-40 pounds, with fish over 50 pounds not uncommon during peak season from April through October. Kings are speed demons – they'll make screaming runs that strip line off your reel faster than you can believe. What makes them so addictive is their unpredictability. One minute you're trolling along, the next your rod's doubled over and line's peeling off at 30 mph.
Mahi Mahi, or Dolphinfish as locals call them, are pure eye candy with those electric colors and acrobatic fights. These fish average 10-25 pounds in our waters and are most active from late spring through early fall. They travel in schools, so when you find one, there's usually more around. Mahi are curious fish that often come right up to the boat, giving everyone a chance to see their brilliant greens and golds before they hit the ice.
Cobia are the wildcards that'll make your heart skip a beat. These brown sharks (that's what they look like swimming up) can push 40-60 pounds and fight like freight trains. Peak Cobia season runs March through June, when they're moving along the coast. They're sight-fishing targets too – you'll actually see them cruising near the surface, and the crew will pitch live bait right to them. Nothing beats watching a 50-pound Cobia eat your bait and then try to drag you to the bottom.
Yellowtail Amberjack, or AJs as we call them, are the muscle cars of the reef. These fish live on structure and will test every knot you tied. They average 20-50 pounds and are available year-round, but really turn on during cooler months. AJs don't jump or run like other fish – they just pull straight down with incredible power. It's a tug-of-war you'll remember, especially on the deeper reefs where they have room to work.
Red Snapper season brings out the best in bottom fishing, typically running from June through July with some fall opportunities. These beautiful red fish are prized for their table fare and fighting spirit. They're structure-oriented, so we fish them around wrecks, reefs, and hard bottom in 80-150 feet of water. A good Red Snapper will make multiple runs back toward the bottom, and landing a 10-15 pounder feels like victory.
Spanish Mackerel round out the mix as perfect action fish when things slow down. They're smaller than Kings but make up for it in numbers and attitude. Spanish Macs hit fast and jump often, keeping everyone busy when the bigger fish aren't cooperating. They're also great for kids or beginning anglers to build confidence and have fun.
