We'll take you out where the water turns that deep blue color and the fish get bigger. Our spacious catamaran handles up to 13 anglers comfortably, so bring the whole crew – there's plenty of room to spread out and fish without getting in each other's way. Whether you're a seasoned angler or just getting your feet wet with offshore fishing, we've got the gear and know-how to put you on fish.
Once we clear the inlet and hit the deep water, you'll feel the difference immediately. The catamaran's twin-hull design cuts through the waves smooth as butter, giving everyone a stable platform to fish from. We'll start by reading the water – looking for temperature breaks, birds working, or weed lines where the action tends to heat up. Our captain knows these waters like the back of his hand and will adjust tactics based on what's biting that day. Some trips we'll spend time trolling for the speedsters like Mahi and Wahoo, other days we'll anchor up over structure and drop baits down for Grouper and Snapper. The beauty of a 6-hour trip is we've got time to try different approaches and really dial in what's working. You'll have access to 2-6 rods depending on your group size, plus we supply all the terminal tackle, lures, and live bait you'll need.
We run a mix of techniques depending on conditions and what species are most active. For the pelagic bite, we'll pull a spread of trolling lures – usually a combination of ballyhoo rigs, diving plugs, and maybe some skirted baits. The key is covering different depths in the water column since these fish can be anywhere from the surface down to 100 feet. When we're targeting bottom fish, we switch gears completely. We'll anchor or drift over known structure – think ledges, rocks, or artificial reefs – and drop down live or cut baits on circle hooks. The tackle is sized right for each situation, so you're not fighting a 5-pound Snapper on gear meant for 50-pound Tuna. We keep a variety of rod and reel combos rigged and ready, from lighter spinning gear for the smaller stuff up to heavy conventional setups for when something big decides to eat. Live bait makes all the difference out there, so we'll either catch it fresh or have it ready in the wells before we start fishing.
Red Grouper are the bread and butter of our bottom fishing game. These chunky fighters typically run 5-15 pounds and put up a solid scrap on the way up from 80-120 feet of water. They're most active during the cooler months when they move into shallower structure to feed. What makes Red Grouper so popular with our clients is they're both fun to catch and excellent table fare – firm white meat that's hard to beat. They're also pretty reliable, so even when other species are finicky, you can usually count on finding some Grouper willing to bite.
Atlantic Bonito show up in good numbers during their migration periods, usually spring and fall. Don't let their smaller size fool you – these 3-8 pound speedsters will test your drag and give you a workout on lighter tackle. They travel in schools and when you find them, the action can be non-stop. Bonito are perfect for anglers who want to feel every headshake and run without dealing with monster fish that take forever to bring up. They hit both trolled baits and live offerings, making them a versatile target species.
Hogfish are one of those species that really gets experienced anglers excited. They're not the biggest fish in the ocean, typically ranging 2-8 pounds, but they're incredibly smart and can be tough to fool. Found around structure and live bottom, they prefer small baits presented naturally. The reward for outsmarting a Hogfish is some of the finest eating you'll find – sweet, flaky meat that's prized by chefs. Spring and summer offer the best Hogfish action when they're most active in our area.
Mutton Snapper are the trophy fish of the Snapper family in our waters. These beauties can push 10-20 pounds and are known for their wariness and strong fights. They inhabit deeper structure and are most active during summer months. Mutton Snapper require patience and the right presentation – they'll often follow a bait for a while before deciding to commit. When one does eat, get ready for multiple runs and plenty of head shaking. Their distinctive pink and yellow coloring makes them a favorite for photos, and their taste matches their looks.
Black Grouper represent the heavyweight division of our regular catches. These bruisers can exceed 30 pounds and will test both your tackle and technique. They inhabit the deeper ledges and structure, often in 100+ feet of water. Black Grouper are ambush predators that will engulf a bait and immediately head for the rocks, so you need to turn them quick or risk getting broken off. Summer months typically offer the best Black Grouper fishing when they're most aggressive. Landing a big Black Grouper is a real achievement and provides enough fillets to feed the whole family.

Look for diving birds - that's your best sign they're feeding on baitfish below. They're pelagic fish that prefer water temps in the 60s and will take almost any lure when they're hot. While they're not table fare here in the States (too oily), they put up a great scrap on light tackle and make excellent bait for bigger fish like tuna or wahoo. Pro tip: when you find a school feeding, work fast with small spoons or plastic lures. They'll disappear as quickly as they showed up, but while they're there, it's non-stop action on every cast.
Mycteroperca BonaciBlack Grouper are the heavyweights of the grouper family, with fish over 50 pounds not uncommon and the record pushing 125 pounds. You'll recognize them by the dark rectangular blotches scattered across their olive-gray bodies. They lurk around wrecks, ledges, and reefs from 30 feet in winter up to 300+ feet in summer. These are ambush predators that use structure to their advantage. What draws anglers is the pure power - once hooked, they're like trying to stop a freight train heading for cover. The meat quality is top-notch with a mild flavor and firm texture. Gear up heavy - 80lb braid minimum with 100lb leader. Here's the key: when you feel that thump, crank hard immediately. They don't nibble, they inhale the bait whole, and if you give them any slack, they'll dive straight back to the rocks and snap you off.
Lachnolaimus MaximusHogfish are one of the more unique catches you'll encounter, with that distinctive pig-like snout and bright orange coloring. They typically run 2-8 pounds and hang around coral reefs, hard bottom, and rocky areas in 10-100 feet of water. These wrasse use their snouts to dig through sand and coral for crabs and shrimp, making them tricky to hook with traditional methods. What guests love is the challenge - they're curious fish but quick to strike and surprisingly strong fighters. The payoff is worth it though - hogfish are premium table fare with sweet, mild meat that some say beats grouper. Here's the trick: use live shrimp on a light knocker rig and make some noise. They're attracted to sound vibrations thinking it's feeding activity. When one shows up, be ready - they hit fast and hard.
Lutjanus AnalisMutton Snapper are prized catches that can reach 20+ pounds, though most run 3-8 pounds. You'll spot them by their olive coloration with blue lines around the face and that distinctive black spot on the side. They prefer sandy areas near reefs and structure in 80-200+ feet, often congregating just outside the hard bottom in the sand. Spring and summer are prime time when they move up to shallower water. What makes them special is the fight - they're stronger than most snappers and will make long runs toward structure. The meat is excellent too, firm and sweet. Here's my go-to technique: use the freshest bait you can get on a light knocker rig, and when you see that pink flash coming up through the water, that's your mutton. Keep steady pressure and lead them away from structure - they'll try to cut you off every time.
Epinephelus MorioRed Grouper are one of our most reliable bottom fish, typically running 5-10 pounds with that distinctive rusty red color and white spots. You'll find them around rocky bottom, ledges, and wrecks in 10-100 feet of water. These fish are aggressive feeders that'll hit live shrimp, crab, or cut bait without much hesitation. What makes them special is the fight - they're tough, stubborn fish that'll test your drag and try to get back to structure. Plus, the meat is outstanding - firm, flaky, and has this sweet, almost shellfish-like taste that makes them one of the best eating groupers around.
