What to Expect on the Water
Your day starts early – that's just how offshore fishing works if you want to maximize your time on the good spots. We'll cruise out past the nearshore structure to deeper waters where the bottom fish hang out. The Gulf of Mexico off Cape Coral has some fantastic ledges, hard bottom areas, and artificial reefs that hold fish year-round. You'll be fishing in 60 to 120 feet of water most of the day, depending on what's biting and where the fish are stacked up. The boat comes fully rigged with everything you need – tackle, bait, ice, cooler, and plenty of water to keep you hydrated. Just bring your own snacks and drinks, plus whatever adult beverages you prefer for the ride back. No fishing license required on this trip since we're fishing federal waters, so one less thing to worry about.
Bottom Fishing Techniques
We're primarily bottom fishing on this trip, which means dropping baits down to where the grouper and snapper live. You'll be using conventional reels spooled with heavy braid – usually 65 to 80-pound test – because these fish don't mess around when it comes to trying to get back to their holes. The typical rig is a knocker rig or fish finder setup with 8/0 to 10/0 circle hooks and enough weight to get down and stay down in the current. Live bait works best when we can get it – pilchards, pinfish, and grunts are grouper candy. When live bait's not available, fresh cut bait like bonito strips, mackerel, and sardines get the job done. The key is keeping your bait right on the bottom where these fish feed. You'll feel the difference between a fish pickup and just bouncing bottom after the first few drops.
Top Catches This Season
Red Grouper are the bread and butter of this fishery. These guys average 5 to 15 pounds and fight like they're twice that size. They're most active during the cooler months from October through March, but you can catch them year-round if you know where to look. What makes red grouper so fun is that initial run when you hook one – they dive straight for the bottom and you better be ready to put some pressure on them or they'll wrap you up in the structure. The meat is absolutely top-notch, firm and white with a mild flavor that's perfect for grilling or frying.
Hogfish are the wild cards that make every trip interesting. These colorful reef fish are usually 2 to 8 pounds and have some of the best-tasting meat in the ocean. They're picky eaters though – you need small hooks and light leaders to fool them, which makes landing them around structure a real challenge. Peak season for hogfish runs from late fall through early spring when they school up for spawning. When you find a good hogfish spot, you can often catch several before they wise up and move on.
Red Snapper season might be short in federal waters, but when it's open, these fish are absolutely worth targeting. They typically run 4 to 12 pounds in our area and are some of the strongest fighters you'll encounter. Red snapper have excellent eyesight, so fresh bait and lighter leaders are crucial. They school up around structure and once you find them, the action can be non-stop. The season usually runs a few days to a couple weeks in summer, so timing your trip right is everything.
Lane Snapper are the most reliable fish on this list – they're almost always around and willing to bite. These smaller snapper usually run 1 to 3 pounds but make up for their size with numbers. They're perfect for keeping kids and novice anglers busy while waiting for the bigger fish to bite. Lane snapper are also excellent eating and don't have the size or bag restrictions of their red snapper cousins.
Gag Grouper are the heavyweights you dream about. These fish can reach 20, 30, even 40 pounds and will test every piece of tackle you've got. Gags are more structure-oriented than reds and love deep ledges and wrecks. They're also more aggressive hunters, so live bait really shines when targeting them. The best gag fishing happens from late fall through early spring when they move shallow to spawn. Landing a big gag grouper is something you'll be talking about for years.
