You'll often spot them by watching for diving birds - jacks push schools of bait to the surface and create a feeding frenzy. Spring through fall gives you the best action when water temps are up. Kids love the hard pulls and long runs these fish make. The key to landing them is keeping steady pressure - they'll try to wrap you around anything they can find. Cast past the school and retrieve fast to trigger their chase instinct.
Lutjanus AnalisMutton Snappers are prized catches with that distinctive pinkish color and blue streaks under their eyes. Most run 16-20 inches, but the bigger ones can hit 30+ and really test your drag. You'll find them around coral heads, rocky structure, and sandy areas near reefs in 80-200 feet of water. They're year-round residents here, but late spring through summer gives you the best bite. They have that distinctive silvery body with dark spots scattered across their sides. What makes them great for families is their willingness to bite - they're not overly picky and put up a solid fight without being too much for kids to handle. The meat is white, flaky, and tastes great on the table. Here's a local trick: when you're working the flats at night, listen for the popping sounds they make when feeding - it'll lead you right to them.
Centropomus UndecimalisSnook are the ultimate inshore gamefish - sleek, smart, and built for speed. They average 18-30 inches here in the Keys, with that iconic black lateral line running down their silver sides. You'll find them around mangroves, docks, bridges, and inlet mouths where current brings food. They're temperature sensitive, so late spring through early fall gives you the best action when water's warm. What makes them special is they're like saltwater bass - they'll hit topwater plugs, soft plastics, and live bait with explosive strikes. The fight is incredible with jumping and strong runs. They're catch and release only during spawning season, but when open, they're excellent table fare. Target structure and current breaks - they love ambush spots where they can surprise prey.
