What to Expect on the Water

Species You'll Want to Hook
Mahi Mahi are the poster fish for offshore Florida fishing, and for good reason. These guys are absolutely gorgeous with their electric blues and greens, plus they're incredible table fare. They travel in schools, so when you find one, there's usually more around. Peak season runs from April through July, but we see them year-round in South Florida waters. They love floating debris, weed lines, and temperature breaks. What makes them special is their acrobatic fight – they'll jump, dive, and bulldoze their way around the boat.
Wahoo are the speed freaks of the ocean, capable of hitting 60 mph when they're on the hunt. These fish are pure muscle wrapped in silver, with razor-sharp teeth that'll cut through wire if you're not careful. They're most active during the cooler months from October through March, and they prefer the deeper blue water beyond the reef. Landing a big Wahoo is like winning the lottery – they're not always cooperative, but when they are, you're in for a ride. The meat is white, flaky, and perfect on the grill.
Black Grouper are the heavyweights of the reef scene. These bruisers can push 50+ pounds and they know every trick in the book to break you off in the rocks. They're ambush predators that sit tight to structure, waiting for an easy meal to swim by. The regulations are pretty strict on these fish, so we practice good conservation and only keep what's legal. Summer months are typically best for the bigger specimens. Fighting a big grouper is like trying to pull a truck out of a parking garage – they use their weight and the structure to their advantage.
Goliath Grouper are the gentle giants of the Atlantic, and encountering one is always a highlight. These fish are catch-and-release only, but hooking into a 200+ pound fish will give you stories to last a lifetime. They're curious and surprisingly common around our local wrecks. Summer is prime time for Goliaths, and they're most active during slack tide when they venture out from their hiding spots. Don't worry about landing them – just enjoy the fight and get some photos before releasing.
Blackfin Tuna might be the smallest tuna species we target, but they make up for size with attitude. These 20-30 pound fish are available year-round and they school up in big numbers. They're fantastic on light tackle and make excellent sashimi if you're into that. During winter months, we find them in shallower water closer to shore, while summer pushes them deeper. They respond well to both trolling and live bait fishing, and their stamina will surprise you.
