The white, flaky meat is restaurant-quality, making them a favorite for the dinner table. They're opportunistic but spooky, so subtle presentations work best. Here's what works: use a 4/0 hook with live shrimp hooked through the tail, let it sink to the bottom, then reel up just enough to stay off the structure. Centropomus UndecimalisSnook are our local celebrities - that bold black lateral line makes them unmistakable. These ambush predators love hanging around mangroves, docks, and creek mouths where they can dart out for an easy meal. Most run 18-24 inches, but the big females can stretch over 3 feet. They're incredibly fast in short bursts and will give you some serious runs once hooked. What makes them special is they're purely catch-and-release here, so it's all about the fight and the photo. Peak action happens around the new and full moons from May through September when they're spawning. They're finicky eaters but love live shrimp and soft plastic swimbaits.
