What to Expect on the Water
Your day starts early with a pre-dawn departure from Shalimar's protected waters. We'll cruise out past the inshore flats, through the pass, and into the Gulf's deeper structure where the big fish live. The ride out gives you time to grab some coffee, rig up your tackle, and watch the sun paint the horizon. Once we hit our first spot - usually around 15-25 miles offshore depending on conditions and what's been biting - it's game time. The captain knows these reefs, wrecks, and ledges like the back of his hand, and he's constantly adjusting based on water temp, current, and fish activity. You'll spend your day working different depths and structures, from shallow reefs holding Snapper to deeper drop-offs where Grouper and Amberjack hang out. Tackle and Techniques

For Redfish and Trout when they're schooled up offshore, we might switch to lighter spinning gear and work jigs or live shrimp. The slot-size fish around 16-20 inches make excellent table fare, while the bigger breeder fish over 20 inches provide memorable photo ops before going back down. Sea Trout might seem like an inshore species, but when they school up offshore during certain times of year, the action can be incredible. These fish respond well to light tackle and provide non-stop action when you find them. Yellowtail Amberjack are the bruisers of the group - hard-fighting fish that'll smoke your drag on their initial run and keep pulling all the way to the boat. Even a 15-pound Amberjack feels like 30 when it's pulling straight down toward a wreck.

Mahi Mahi or Common Dolphinfish are what offshore dreams are made of. These fish are most active during warmer months when water temps hit the upper 70s and beyond, typically April through October in our area. They're structure-oriented fish that love floating debris, weed lines, and temperature breaks. What makes them special is their aggressive nature - they'll often travel in schools, so when you hook one, there's a good chance his buddies are still around. They're also incredible fighters, with those trademark jumps and head shakes that'll get your heart pumping. Most anglers love them not just for the fight, but because they're some of the best eating fish in the Gulf.
Sea Trout offshore behave differently than their inshore cousins. They school up in massive numbers over certain bottom types, usually in 20-40 feet of water during cooler months. Winter and early spring can produce some phenomenal Trout fishing when they stack up offshore. These fish are perfect for light tackle enthusiasts - they hit aggressively but don't have the raw power of larger species, making them ideal for newer anglers or anyone who wants steady action. The bite can be so consistent that you'll wear yourself out catching them.
Redfish offshore are typically the big boys - fish that have moved out from the inshore marshes and are feeding on the abundant bait around offshore structure.
