Bottom Fishing the Gulf Structure

The technique is straightforward but effective - let your bait hit bottom, reel up a crank or two, and hold on. When a Grouper picks up your bait, you'll know it - they hit hard and head straight for the rocks. That's where Captain Shawn's coaching comes in handy, especially if you're not used to the power these fish can put out. We run medium to heavy action rods with enough backbone to turn a fish away from structure, paired with conventional reels loaded with 30-50 pound test. The boat's rigged with a quality fish finder and GPS, so we can mark productive spots and come back to them when the bite slows down elsewhere.
Top Catches This Season
Red Grouper are the bread and butter of this fishery, and for good reason. These chunky bottom dwellers average 5-15 pounds but can push 20+ when you find the right spot. They're structure-oriented fish that love rocky ledges and hard bottom, exactly what we've got plenty of around Carrabelle. Red Grouper hit year-round but really turn on during the cooler months when they move into shallower water to feed. What makes them so fun is the initial hit - they'll absolutely crush your bait, then make a beeline for the nearest rock pile. You've got about three seconds to turn their head before they wrap you up and it's game over.
Red Snapper season brings its own excitement, typically running through the summer months when these beautiful fish are legal to keep. They're schooling fish, so when you find one, there's usually more underneath. Red Snapper are aggressive feeders that will hit live bait, cut bait, or even jigs when they're fired up. They average 2-8 pounds in these waters, with the occasional keeper pushing into double digits. The fight is completely different from Grouper - Snappers will pull drag and make runs, giving you a real tussle on the way up.
Lane Snapper might be smaller than their red cousins, but they're scrappy little fighters that keep the action going between the bigger bites. These guys are available year-round and make excellent table fare. They're perfect for kids or anyone who wants constant action - Lane Snapper will hit just about any bait you put in front of them, and they school up in good numbers around the same structure that holds the bigger fish.
Gag Grouper are the wildcards of this trip. They're less common than Reds but worth the wait when you hook into one. Gags are more active predators that will chase bait in the water column, making them a bit more unpredictable than their bottom-hugging cousins. They're also excellent eating, with firm white meat that's hard to beat on the dinner table. Peak season for Gags runs from late fall through early spring when they're most active in our area.
Black Sea Bass round out the target species list, and these little powerhouses pack a surprising punch for their size. They're year-round residents that love structure and will readily take small baits. Sea Bass might only average 1-3 pounds, but they're feisty fighters and make great eating. They're also a good backup plan when the bigger fish are being finicky - you can usually count on Sea Bass to keep your cooler from going home empty.
