Destin Spring & Fall Offshore Fishing Charters
When the temps cool down and the crowds thin out, that's when Destin's offshore fishing really lights up. Our seasonal charters run from September through May, giving you prime access to some of the Gulf's hottest action during spring and fall. With trips ranging from 4 to 8 hours, you get to pick your pace – whether you want a quick morning bite or an all-day battle with the big ones. We keep our groups small at 6 anglers max, so you're not fighting for rod space or missing your shot at that fish of a lifetime.
What to Expect on the Water
Picture this: you're rolling out of Destin Harbor just as the sun's painting the sky pink, and the Gulf is glassy calm. That's the magic of our daybreak departures – we're hitting the grounds while the fish are still feeding and before the afternoon winds kick up. Our seasonal window isn't random – September through May is when the water temps are just right, baitfish are stacked up, and the pelagics are moving through our area in serious numbers. You'll be fishing productive waters anywhere from 15 to 40 miles out, depending on where the action is that day. The captain's got his finger on the pulse of current conditions, fish reports, and water temps, so you're always heading to the spots that are producing. These aren't your typical summer tourist trips – this is serious fishing for serious anglers who know that timing is everything.
Techniques & Tackle
We're talking proper offshore trolling here – the kind that puts multiple lines in the water and covers serious ground. You'll be pulling a spread of ballyhoo, diving plugs, and skirted baits at different depths to target whatever's moving through. When we mark bait or structure on the sounder, we'll switch gears to vertical jigging or live bait fishing. The boat comes rigged with quality conventional reels spooled with 30 to 50-pound test, and we've got everything from spinning gear for the smaller stuff to heavy tackle for when the big boys show up. Circle hooks are the name of the game for most of our trolling – they hook fish better and make for cleaner releases. Don't worry if you're not up to speed on all the techniques; our crew will walk you through everything from setting the drag to proper fighting stance. The key is staying ready because when the bite turns on offshore, it can happen fast and furious.
Top Catches This Season
Grey Triggerfish are the bread and butter of our fall and spring trips, and for good reason – they're excellent table fare and put up a surprisingly good scrap for their size. These guys hang around structure and wrecks, usually in 80 to 150 feet of water. Fall is prime time when they're fattening up, and you'll find them in good numbers from September through November. They're not huge – most run 2 to 4 pounds – but they're feisty and make great eating. What anglers love most is that they're fairly predictable; find the right bottom structure and you're likely to load the cooler.
Mahi Mahi are the crown jewel of our spring action, typically showing up in good numbers from March through May as they follow the warm water north. These fish are pure excitement – they hit trolled baits hard, jump like crazy, and those electric colors are something to see. Most of our mahi run 10 to 25 pounds, though we see bigger ones mixed in. They love floating debris, weed lines, and temperature breaks, so we're always scanning the water for signs. The best part about mahi is they usually travel in schools, so one fish often means several more are nearby.
Wahoo are the speed demons of our offshore spread, capable of hitting a trolled bait at 40+ mph and stripping line like you wouldn't believe. These torpedo-shaped predators are most active during the cooler months, making our seasonal trips perfect for targeting them. They're typically found in 100+ feet of water around drop-offs and current edges. A good wahoo will go 20 to 50 pounds and provide some of the best eating you'll find offshore. Anglers get addicted to that initial screaming run – it's pure adrenaline.
Bluefin Tuna are the holy grail of our winter and early spring trips, usually showing up from December through March when water temps drop. These are serious gamefish that can push 100+ pounds and fight for hours. They're incredibly strong and smart, often requiring finesse tactics and perfect presentations. The smaller "footballs" in the 30 to 60-pound range are more common, but even these will test your endurance. Bluefin are what separate the weekend warriors from the serious offshore anglers – they demand respect and proper tackle.
Spanish Mackerel round out our target list and provide consistent action throughout our season. These smaller speedsters rarely exceed 3 pounds but make up for size with numbers and aggression. They'll hit small spoons, jigs, and live bait with enthusiasm, making them perfect for keeping kids and new anglers engaged. Spanish mackerel are also excellent for the smoker and make great bait for bigger fish when the bite gets tough.
