You'll find them on grass flats, around structure, and anywhere baitfish are schooling. Look for diving birds - that's usually jacks pushing sardines and mullet to the surface. They're active year-round in our warm Gulf waters, especially during moving tides. What guests love about jacks is their raw power and willingness to eat almost anything. They're not great table fare, but the fight more than makes up for it. Pro tip: when you see birds working, cast past the school and rip your lure back fast. Jacks love the chase and aggressive retrieves trigger strikes.
Mycteroperca MicrolepisGag grouper are one of the more challenging fish we target out here. They average 20 inches but can push 4+ feet and 80 pounds. These gray, marbled fish hang around offshore reefs, wrecks, and rocky structure in 40-150 feet of water. Spring through fall gives you the best shot at them when they're more active. What makes gag grouper special is their bulldozer fight - once hooked, they'll try to drag your bait straight back to the rocks. The meat is outstanding, firm white fillets that make the battle worth it. Pro tip: keep your reel locked tight and your rod low. The second you feel them take the bait, pull hard and don't let them get back to their hole or you'll lose them every time.
Scomberomorus CavallaKing mackerel are pure speed demons that'll test your drag system. These silver bullets average around 30 pounds but can hit 90+ pounds, with the females getting much bigger. We find them in 40-150 feet of water, usually over structure or along drop-offs where baitfish gather. Spring through fall is peak season when water temps hit that 68-84 degree sweet spot. What makes kings special is their blistering runs - they're almost as fast as wahoo and will peel line like crazy. The meat is rich and oily, great for smoking or grilling. When trolling for kings, always use a wire leader and rig two hooks on your bait - one in the nose, one trailing behind. Kings love to bite the tail end of baitfish, so that stinger hook saves a lot of missed fish.

The trick with sheepshead is feeling those subtle nibbles - they'll pick at your bait trying to steal it clean off the hook. Use fiddler crabs or shrimp, keep your bait tight against structure, and set the hook hard the moment you feel weight.
