Techniques We Use Out There
We run a mix of techniques that cover different parts of the water column and different fish behaviors. Live bait fishing is huge - there's nothing like a frisky sardine or cigar minnow to get the attention of hungry fish down deep. We'll work the bottom with live bait for grouper and snapper, and also send them out in the current for whatever's cruising by. Slow pitch jigging has become a game-changer for offshore fishing - those metal jigs flutter down and trigger reaction strikes from fish that might ignore other baits. The technique takes a little getting used to, but once you dial it in, you'll be hooked. We also run trolling spreads when we're moving between spots or when the surface action is hot. Trolling lets us cover water and pick off mahi, bonito, and whatever else is chasing bait on top. The boat's rigged with quality gear, but bring your own rods if you've got favorites you want to fish with.
Top Catches This Season
Mahi Mahi are the crowd-pleasers out here - these fish are absolute rockets when they're hooked, and they're gorgeous to look at with those electric colors. They typically run anywhere from 10 to 30 pounds in these waters, with the occasional bull dolphin pushing 40-plus. Best part about mahi is they often travel in schools, so when you find one, there's usually more around. They love floating debris, weed lines, and current edges. The bite can be hot any time of year, but spring through fall tends to be most consistent. These fish will absolutely wear you out on light tackle, and they're fantastic on the dinner table.
Yellowtail Amberjack are the muscle cars of the reef - these things will test your drag system and your back. They hang around structure in that 100 to 200-foot range and can push 50, 60, even 70 pounds. When you hook into a big AJ, it's going straight for the rocks, and you've got to turn its head quick. They're not the prettiest fish, but they fight like nothing else and make great blackened fish tacos. Peak season is typically spring and fall when water temps are in that sweet spot, but we catch them year-round.
Lane Snapper might not be the biggest fish out there, but they're scrappy little fighters and excellent eating. These guys usually run 12 to 16 inches and love live shrimp or small pieces of cut bait. They're perfect for keeping the action going between bigger fish, and kids especially love them because they bite aggressively and fight hard for their size. You'll find them around any kind of bottom structure, and they're one of the most reliable catches we have.
Black Grouper and Gag Grouper are the kings of the bottom. These fish are smart, strong, and absolutely delicious. Black grouper can get huge - 30, 40, even 50 pounds - and they know every cave and ledge down there. Gags are typically a bit smaller but still put up a serious fight. Both species require heavy tackle and quick reflexes because once they feel the hook, they're heading straight for the rocks. The regulations on grouper change seasonally, so we always check current rules, but when they're open, there's nothing better than a fresh grouper dinner.
