What to Expect on the Water

Bottom Fishing & Heavy Tackle
This is classic offshore bottom fishing at its finest. We're using stout conventional reels spooled with heavy braid, paired with 7-foot boat rods that can handle the pressure of hauling big fish up from the depths. Circle hooks are the standard here - they're required for grouper and they flat-out work better for everything else too. You'll be dropping 8 to 16-ounce sinkers depending on the current, and most of the time we're fishing cut bait, live pinfish, or big chunks of bonito. When we hit the wrecks, sometimes we'll switch it up with vertical jigs or large spoons to trigger reaction strikes from amberjack and other pelagics cruising the structure. The key is staying tight to the bottom where these fish live and feed.

They average 10 to 20 pounds offshore, with bigger bulls occasionally making an appearance. Spring through fall is prime time for mahi, and they're drawn to anything floating on the surface. Their flaky, mild meat makes them a favorite at the dinner table too.
Yellowtail Amberjack are the power players of the offshore scene, commonly weighing 20 to 40 pounds with much larger fish always possible. These fish school around wrecks and hard bottom, and when they bite, you know it immediately. They make long, powerful runs that test your drag system and your back muscles. Amberjack are most active during the warmer months, but you can find them year-round if conditions are right. They're incredibly strong fighters that will give you a workout, and the smaller ones under 28 inches make excellent table fare.
Mutton Snapper are the prize catch for many anglers, known for their beautiful colors and excellent eating quality. These fish are typically found around deeper reefs and can be finicky biters, making them a real challenge. They usually run 3 to 8 pounds, though bigger ones are always possible. Muttons are most active during the summer months and into early fall. Their wariness makes them tough to catch consistently, but when you do connect, you'll understand why they're so highly regarded by offshore anglers.
Lane Snapper might be smaller than their mutton cousins, but they make up for it in numbers and willingness to bite. These colorful fish typically run 1 to 3 pounds and can provide steady action when larger species are being stubborn. They're excellent table fare despite their smaller size, and kids especially love catching them because they're so cooperative. Lane snapper bite best during the warmer months and can often save the day when other species aren't cooperating.
